When I was a kid rice pudding was my favourite dessert. I remember visiting my grandma and always having rice pudding to offer me. One rice pudding cup was not enough for me, I would go for at least two cups and same applies until now. The recipe is really easy to follow and it wont take you more than 20 minutes.
For this recipe you will need (4 servings):
8 tsp rice
500 ml milk
300 ml water
6 tsp corn flour
8 tsp sugar
Rinse the rice in cold water. Place the rice, water, sugar and half portion of milk in a large saucepan and let them boil. Stir every 3 minutes. Dilute the corn flour with the other half portion of milk and as soon as the rice is boiled pour the milk and the corn flour and mix them all together. Simmer for 5 more minutes, stirring slowly all the time to prevent the rice from sticking to the bottom of the pan. Add the lemon skin, stir and take off the heat.
Let them cool and then serve in cups adding cinnamon on the top.
